May is Celiac Disease Awareness Month, a time dedicated to increasing understanding around gluten-related disorders and the importance of safe food preparation for millions of people worldwide. For many families, going out for dessert is supposed to feel simple and joyful. But for those living with celiac disease, gluten intolerance, wheat allergies, or other dietary restrictions, it can sometimes feel stressful instead.

At Chill-N Nitrogen Ice Cream, we believe ice cream experiences should feel welcoming, thoughtful, and inclusive whenever possible. While we are not a certified gluten-free facility, we work hard to accommodate all dietary preferences and restrictions through ingredient options, preparation procedures, and operational protocols designed to reduce cross-contact risks.

🌾 What Is Celiac Disease?

Celiac disease is an autoimmune disorder in which consuming gluten triggers an immune response that damages the small intestine. Gluten is a protein found in wheat, barley, and rye. According to the Celiac Disease Foundation, an estimated 1 in 100 people worldwide are affected by celiac disease, although many remain undiagnosed. [1] Even small amounts of gluten can cause symptoms and intestinal damage in individuals with celiac disease, which is why food handling procedures matter so much. [3]

🍦 Why Dessert Can Be Challenging for Gluten-Sensitive Guests

Ice cream itself is often naturally gluten-free. However, challenges can arise through:

- Cookie Mix-Ns

- Brownies or baked ingredients

- Shared utensils

- Shared preparation surfaces

- Cross-contamination during service

The U.S. Food and Drug Administration notes that preventing cross-contamination is one of the most important aspects of serving individuals with gluten-related disorders safely. We take several meaningful steps to accommodate guests with dietary restrictions whenever possible.

🥣 Single-Use Mixing Bowls and Blades

One of the most crucial parts of our process is that every mixing bowl and blade is thoroughly washed after each use. Since nitrogen ice cream is made fresh per order, each serving is prepared individually rather than scooped from a shared tub. This allows for a cleaner preparation process and lowers the risk of ingredient transfer between orders. Research from the Centers for Disease Control and Prevention shows that cleaning and separation procedures are essential for reducing allergen exposure in food service. [5]

🚨 Allergy Awareness Protocols

Communication is key when addressing food allergies and sensitivities. That’s why we use a red sticker alert system. When a guest informs us of an allergy or dietary restriction:

- a red sticker is placed on the cup

- team members are alerted immediately

- extra preparation precautions are followed

This system helps our staff stay aware throughout the preparation process. According to Food Allergy Research & Education, strong communication between guests and restaurant staff is one of the most effective ways to reduce accidental allergen exposure. [2]

📦 Separate Ingredient Handling for Mix-Ns

Cross-contamination often occurs through shared Mix-N/topping stations. To help minimize this risk, our team retrieves Mix-N ingredients from their original storage containers separately and avoids using front-counter bins for allergy-sensitive orders when needed. This extra step helps remove exposure to crumbs or particles that might be present in public Mix-N/topping stations. The FDA’s food labeling and allergen guidance emphasizes the importance of ingredient handling and avoiding shared contact points whenever possible. [4]

Daniel Golik is the Co-Founder and Chief Operating Officer (COO) of Chill-N Nitrogen Ice Cream. In 2012, Daniel Golik, then a senior at the University of Florida, had a wild idea: nitrogen ice cream made fresh to order.
